My wife and I used to go to the Ippudo in Tokyo, where in addition to the Hakata style (Tonkotsu) ramen they have fabulous gyoza: small and very crispy on the bottom.  So they know how to do them.  Maybe you can create a groundswell of demand for them.</description>
