Cul de Poule

Cul de Poule is the cheeky name of a trendy restaurant on rue des Martyrs. It means “hen’s ass”, which may or may not make you want to eat there. It’s also the name of a kind of bowl used to mix up mayonnaise. The other night, it could have served as a nickname for the person who greeted us at the door. Luckily, our waiter was perfectly charming. And the food was great, too.

White Gazpacho

This is a soup for olive oil lovers. Almonds, bread, garlic, and grapes are puréed and strained, and a large amount of olive oil is blended in until you have a silky emulsion. A healthy dose of sherry vinegar balances the richness.
