This is a soup for olive oil lovers. Almonds, bread, garlic, and grapes are puréed and strained, and a large amount of olive oil is blended in until you have a silky emulsion. A healthy dose of sherry vinegar balances the richness.

I love a good white bean soup, aromatic with rosemary, perhaps cooked with a rind of parmesan. I’m also a sucker for soup à l’oignon. This soup combines the two, and it works.

Squash and Coconut Soup

I wanted something with island flavor that would satisfy my cold weather blues, and a spicy squash soup seemed like the answer. Hard squashes like pumpkin are used throughout the Caribbean, in soups and stews. They are also in season here in the cooler States.
